Scotcheroo Truffles
Scotcheroo truffles are easy to make and are rich and delicious. This is the same filling that I use for my white chocolate peanut butter truffles. It's made from peanut butter, butter, powdered sugar, and Rice Krispies cereal. It got me thinking...scotcheroos are also made from peanut butter, sugar, and Rice Krispies cereal. I'd already made scotcheroos in several forms---it was time to make a truffle. Instead of dipping them in white chocolate, I dipped them in melted chocolate and butterscotch chips!Scotcheroo Truffles Ingredients
(scroll to the end of the post for a printable version)- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 2 Tbsp. butter
- 1 ½ cups Rice Krispies cereal
- 1 cup semisweet chocolate chips (melting chocolate wafers work great too)
- 1 cup butterscotch chips (+ ¼ cup for drizzling, optional)
How To Make Peanut Butter Scotcheroo Truffles
(If you don’t have one of these candy dipping tools, I’d highly recommend getting one!)
Melt chocolate chips and butterscotch chips in a double boiler or microwave. I usually use my microwave and heat the chocolate chips and butterscotch chips for 30 seconds, then I stir and heat them in additional 15-20 seconds intervals until smooth and creamy. Every microwave is different, my advice is to go low and slow in short intervals. DO NOT OVERHEAT CHOCOLATE. Dip the truffle balls in chocolate, tapping the fork or tool against the edge of the bowl to allow excess to drip off.Scotcheroo Truffle Recipe

Ingredients
- 1 cup creamy peanut butter
- 1 cup powdered sugar sifted
- 2 Tbsp. butter softened
- 1 ½ cup rice crispies cereal
- 1 cup semisweet chocolate chips (or melting chocolate wafers)
- 1 cup butterscotch chips (+ ¼ cup for drizzling, optional)
Instructions
- Combine peanut butter, butter, and sugar in a mixing bowl. Add cereal. Mix well.
- Roll into 1" balls and place on parchment lined baking sheet. Freeze 1 hour.
- Melt your chocolate chips and butterscotch chips in a double boiler or microwave (stirring every 30 seconds until smooth). Dip peanut butter balls into chocolate.
- Tap the side of the bowl to let excess drip off.
- Place truffles back onto baking sheet.Note: If the truffles start to get sticky while you are dipping them, place back in the freezer for 15 minutes.
- If you'd like to add a butterscotch drizzle, melt the remaining ¼ cup of butterscotch chips and drizzle over the truffles.
Notes
Store truffles in an airtight container at room temperature or in the refrigerator for up to 2 weeks.

Yes, I think they'd be just fine in the mail.

These are GREAT! but I feel I’m missing something. It’s impossible to shape into balls prior to freezing. Way too sticky

Loved! Huge hit...made for a second holiday party! The second time I switched from chocolate chips to a melting candy chocolate. It blended well with the butterscotch chips and it helped form a firmer shell. I like to be able to stack my snacks when I'm doing a tray of assorted goodies.
